MGM China hosts a forum in Macau on sustainable gastronomy

Macau casino firm MGM China Holdings Ltd hosted in mid-June in Macau what it termed a gastronomy forum, highlighting the group’s efforts in sustainable food and beverage operations. The event brought together industry representatives, academics and sustainability specialists to discuss responsible dining practices and environmental stewardship.

The casino operator said it co-organised the forum, titled “Leading the Shift: The Power of Sustainable Gastronomy to Create Change”, together with The Sustainable Restaurant Association, a not-for-profit organisation; and food-waste technology provider Winnow.

The event was held at MGM Cotai in conjunction with Sustainable Gastronomy Day, an annual event recognised by the United Nations.

According to MGM China, the forum explored how sustainable dining practices could contribute to the long-term development of Macau’s food and beverage sector, while improving operational resilience, guest experience and environmental performance.

The event also sought to encourage wider adoption of sustainable practices across sourcing, kitchen operations, and dining services.

The casino firm used the forum to showcase several of its sustainability achievements in food and beverage operations.

Geoffrey Simmons, MGM China vice president of food and beverage, said Macau was well positioned to promote sustainable luxury hospitality due to its status as a gastronomy and tourism destination.

“The convergence of culinary excellence and sustainability leadership is a top priority for MGM, and luxury hospitality and environmental responsibility can thrive together,” Mr Simmons stated.

The event also featured presentations by Karen Finnerty, director of growth and partnerships for Asia Pacific at The Sustainable Restaurant Association; and Christy Chen, business development lead at Winnow Solutions, who discussed global hospitality sustainability trends and the role of artificial intelligence in reducing food waste.

A panel discussion included representatives from MGM China, Winnow, the Macao University of Tourism and JW Marriott Hotel Hong Kong.
